Summer is on it’s way and icecream sandwiches are in! This is a great dessert to make for a dinner party. Cookies can be made in advance, kept in an airtight container and away from my Canadian. Icecream sits in the freezer until you’re ready to assemble. Tu Meke, these are too easy.

These icecream sandwiches are a perfect example of how to support local. Fix & Fogg are a beautiful Wellington company that make the most divine natural nut butters and spreads. Here you want to use their smooth peanut butter, but I would be very intrigued to try this with their coffee maple peanut butter. I love that by buying their peanut butter, I support local producers who give not only people jobs and income, but also give back to their community. Totally rad, and we love them.

Lewis Road Creamery is slowly becoming a giant of a brand in New Zealand. They started making delicious milk from a converted shipping container in the Bay of Plenty and have caused supermarket madness ever since. When they combined with Whittakers to make a chocolate milk, grocery stores had lines for the milk or were sold out! They now make icecream as well as a host of dairy products. The icecream is made from their beautiful milk and free range eggs.  I adore their hokey pokey, but here we’ve used their peanut butter and jelly icecream.  Feel free to share  your favourite flavour combinations below!

It might just be me but the recipe does not display on Samsung note 8.
