One of my favourite days of the year is Shrove Tuesday. Traditionally it was the final meal before the beginning of Lent. A day to use up items that are normally given up; sugar, flour and eggs. In our house, it means we can legitimately have pancakes for dinner. Over the years, My Canadian and I have celebrated with a range of meals, including the Shrove Tuesday Disaster of 2014.
2014 was when My Canadian and I attempted to create Banh Xeo, the Vietnamese Pork and Prawn Pancakes. Our attempts tasted remarkably similar to school paste, not the crispy light pancakes we had hoped. We tried three different recipes and all of them failed.
Tonight we will be celebrating with the traditional North American pancakes with berries, bacon and covered in Canadian maple syrup.
