These poke bowls are a beautiful option for when I’m flying solo; and it makes a gorgeous office lunch as well. Use what vegetables you have in the fridge and take the time to make it look beautiful. Visually appealing food is much more enjoyable to eat, so go ahead and treat yourself. I find rice difficult to cook for one, the measurements and timings go out the window. Thus, I will often cook rice for four people, and freeze the reminder into handy portions for an easy future meal.
