Spiced Cauliflower Salad

This Cauliflower Salad has been a recent favourite of mine, especially for those times when you simply can’t look at another lettuce leaf.  It is fragrant and warm with beguiling freshness. Served on it’s own, it is a beautiful lunch or a light dinner. Paired with slow cooked lamb, or grilled paneer cheese and some warm naan, it makes a divine dinner for two. Blanch the cauliflower so it is tender but still with a bit of crunch. Adding some sliced almonds, or toasted cashew nuts is a lovely touch as well.

Ingredients

  • Dressing:
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1 tbsp runny honey
  • 3 tbsp apple cider vinegar
  • 2 tbsp avocado oil
  • Salad:
  • 2 cups cauliflower florets, blanched
  • 1/2 red onion, thinly sliced
  • 2 carrots, julienned
  • 1/2 cup sultanas, soaked for half an hour
  • Handful of finely sliced mint

Instructions

In a jam jar combine the dressing ingredients and shake. Season with salt and pepper and put aside.

In a salad bowl, combine the salad ingredients, except the mint and toss through the dressing until it lightly coats everything. Top with the sliced mint and serve with warm naan bread.

Delicious, light and fragrant.

Notes

This can easily be multiplied to serve more if needed. It also makes delicious and healthy leftovers for office lunches the next day.
